Welcome to my lazy Sunday following a much-too-late, but all-too-fun night on the town (dear 4:00am, I don’t often see you). We were celebrating birthdays and the return of life post-production. I indulged my better half’s love of liquor, beer and chocolate by making Irish Car-Bomb Cupcakes, adapted from this goddess of all thing delicious at Smitten Kitchen. Guinness in the chocolate cake batter. Jameson Irish Whiskey in the chocolate ganache filling. Topped off with Bailey’s Irish Cream butter cream frosting. In life and eating, you have to balance the good with the bad (she says as the carrots and hummus eye her knowingly from across the room).
A million thanks to my friend Nicole for her help in the baking, icing and transportation of these bad boys to the party. We were the belles of the ball with cupcakes and drinks in hand as we danced the night away.
