I’ve always wanted to be one of those girls that feels as at ease with the grill as she does in the kitchen. Until recently, I’ve always allowed my other half to “man the grill”, if you will. But to him, grill = meat. To me, the grill = a great way to be outside and prepare veggies I love. I asked for a few lessons, learned me way around and feel competent and capable of making a delicious dish on the grill. If you’re preparing for an upcoming party… I don’t know… let’s say a Superbowl fiesta! – I have the perfect [healthy] dish to serve AND help you feel at ease with the grill. Pictures followed by recipe. Food processor or blender is required to whip up this Vitamin C and carotenoid packed dish.

My favorite accompaniment for this dip: sliced carrots
Roasted Red Pepper Dip
Serves 8. An alternative to hummus, roasted red peppers, toasted walnuts and a touch of spice, offset by brown sugar. Serve with chopped veggies of your choice or warm pita bread.
Ingredients
- 1/2 cup walnuts
- 4 roasted red peppers, peeled and seeded
- Juice of 1/2 lemon
- 1/2 cup crushed plain pita chips
- 1 1/2 tablespoons extra virgin olive oil
- 1/4 teaspoon ground cumin, more to taste
- Sea salt, to taste
- Ground black pepper, to taste
- 1/2 teaspoon red chili paste, more to taste
- 1 tablespoon brown sugar
Method
Preheat oven to 350°F. Place walnuts on a rimmed baking sheet and toast until fragrant and lightly browned, 5 to 10 minutes. Let cool. Combine walnuts, red peppers, lemon juice, pita chips, olive oil, cumin, salt, pepper, chili paste and brown sugar in a food processor. Pulse to combine ingredients, scraping down sides of bowl occasionally, until a spreadable paste is obtained. Chill until ready to serve.

Skip the sour-cream and cheese based dips. Use whole foods to make spreads with even more flavor.
